Cajun Style Potato Salad

This recipe is based off of a Southern Style Potato Salad recipe my Mother makes. I call it my Creole Style Potato Salad because I use the holy trinity! Wait?!? You do know what the holy trinity is right? The Holy trinity is celery, bell peppers and onion. Learn something everyday don't we.

Ingredients:
6 1/2 cups Yukon gold potatoes (5-6 potatoes usually)
3 hard boiled eggs (chopped)
1 1/2 cup sweet onion (chopped)
1/2 cup celery (diced)
1/4 cup sweet relish
3 cloves garlic (minced)
1/2 cup green bell pepper
1/4 cup Cajun Dijon mustard (you can use any Dijon)
1/2 cup mayo
kosher salt (to taste)
fresh crack pepper (to taste)
1 tsp essence

In a large stock pot bring water to boil and cook potatoes for 15-20 minutes. Drain and chop.

(While potatoes are cooking if I do not have any I hard boil some eggs as well.)

Combine all ingredients in large mixing bowl and gently fold till mixed well. Serve warm or let chill in fridge for 1-2 hours.
