Squash Blossom Omelette

We have a lot of squash blossoms this season, so expect a pizza recipe with them soon. Enjoy this easy breakfast until then!

Ingredients:
3 large eggs
2-3 tbsp half and half
3 green onions (chopped)
2 cloves garlic (minced)
4 squash blossoms (cleaned and chopped)
1 fresh basil leaf diced
1/4-1/3 cup habanero white cheddar (shredded)
Kosher salt (to taste)
Fresh crack pepper medley (to taste)
1/2 tbsp unsalted butter

In a small mixing bowl beat three eggs using a whisk. Whisk in half and half, basil and seasonings.

Add butter to a 10 inch non-stick skillet and heat over medium heat until butter has fully melted. Add Squash blossoms, garlic and onions sautéing for 5 minutes. Then pour egg mixture evenly over ingredients. 

As the mixture begins to set at the edges (4-5 minutes) add your cheese by placing it along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate and serving hot. Enjoy!

Blackened Cod Omelet

Now this is a great way to start your day!  Enjoy

Ingredients:
Fish
1 (.25 lb) piece of a cod fish fillets (cut in bite sized pieces)
2 tbsp butter

Rub
1/4 tsp Lime's zest
1/2 tsp olive oil
1 tsp Hot Hungarian paprika
1/4 tsp Garlic powder
1/8 tsp Cumin
1/4 Cayenne
1/8 tsp ground Thyme
1/8 tsp ground Oregano

Omelet
3 large eggs
2-3 tbsp half and half
1/3 cup dill Havarti (shredded)
1/4 tsp essence
kosher salt (to taste)
fresh crack pepper (to taste)
2 tbsp butter

Pat fish pieces dry and coat with rub.

In a small mixing bowl beat three eggs using a whisk. Whisk in half and half and seasonings.
Add butter to a 10 inch non-stick skillet and heat over medium heat. Add fish, and cook for 5-6 minutes, flip and cook for another 5-6 minutes. Add more butter if needed and then pour egg mixture into skillet covering fish evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate. Serve hot and enjoy!

Spring Asparagus Scramble

The Garden is producing so in lieu of an omelet I made a fresh spring garden scramble.  If you do not have the same love of gardening you can go to your local store and pick up the needed ingredients.  For the green garlic substitute 1 green onion and 3 garlic cloves.  Enjoy!

Ingredients:
12 stalks fresh asparagus (trimmed, chopped)
2 eggs
1 1/2 tbs fresh rosemary (chopped)
1/2 green garlic and stalk (chopped)
1/4 cup Fresh Parmesan (sliced into slivers)
2 tbsp plus one pad butter
Kosher Salt (to taste)
Fresh Crack Pepper (to taste)

Heat 2 tbsp butter over medium heat in a medium non-stick skillet.  Once heated add asparagus, green garlic, green garlic top and rosemary and cook for 7-10 min folding often.  Move Asparagus mixture to one side of skillet. Add 1 pad butter and then crack eggs into empty side of skillet, scrambling for 3-4 min.  Add salt and pepper to entire skillet and fold all ingredients together. Top with Parmesan, turn off but do not remove from heat and let sit 3 minutes or until cheese begins to melt.  Enjoy!

"Allium" Omelet

If you love onions and other Allium genes flowering plants I suggest you wolf down this onion.  Though you may want to warn any loved ones you plan on getting close to about your eating habits.

Ingredients:
Omelet
3 large eggs
2-3 tbsp half and half
1/3 cup white sharp cheddar (shredded)
1/4 tsp fresh thyme (diced)
1/4 tsp fresh rosemary (diced)
1 tbsp chives (chopped)
2 tbsp onions (diced)
2 tbsp shallot (diced)
2 garlic cloves (diced)
1/2 tsp essence
kosher salt (to taste)
fresh crack pepper (to taste)
2 tbsp butter

In a small mixing bowl beat three eggs using a whisk. Whisk in half and half and seasonings.
Add butter to a 10 inch non-stick skillet and heat over medium heat. Add onion, shallot and garlic to the skillet and cook for 5-6 minutes stirring often.  Pour egg mixture into skillet covering vegetables evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese and chives by sprinkling them along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate. Serve hot and enjoy!

Open Face Fajita Scramble

Here is a quick little Mexican inspired breakfast for your palates enjoyment.

Ingredients:
Fajita Scramble
2 fresh corn tortillas
3 large eggs
1 tbsp cream
1/8 lb new york style chorizo
1/8 lb chicken thigh or new york strip (shredded)
1/4 tsp ground chipotle chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
1/4 tsp cumin
1 limes juice
1/4 of a white onion
2 cloves garlic
1 tbsp butter
kosher salt (to taste)
fresh crack pepper (to taste)

Topping
1 limes juice
1 green onion (diced)
1 Roma tomato (diced)
1/3 cup fresh cilantro (chopped)
1 jalapeno (seeded, diced)
1/4 cup sharp cheddar (shredded)
1/4 cup jack (shredded)

Whisk eggs with cream in a small mixing bowl until fluffy.

In a medium skillet heat butter over medium heat.  Rub seasonings on chicken or new york strip. Once melted and bubbly add chorizo, chicken (or new your strip,) onion, garlic cumin, chipotle and the juice of one lime.  Cook for 7-8 minutes or until chicken is cooked through.  Push all ingredients to one side and add the egg mixture.  Cook eggs while folding for 4-6 minutes or until your desired "scrambledness" is reached.

In a small bowl toss together green onion, tomato, jalapeno, cilantro and lime juice until even.

Remove skillet from burner and heat both tortillas.  Split meat mixture between both tortillas, then top with cilantro mixture and cheese. Serve hot and enjoy! 

Mediterranean Lanka Frittata

This recipe was an experiment in combining Mediterranean flavors into a frittata.  All in all I am very happy with the results and hope you enjoy!

Ingredients:

6''x9'' piece of Lavash bread.
3 large eggs
3 tbsp half and half
1/4 cup goat cheese (crumbled)
1/4 cup extra sharp (cheddar)
7 Kalamata olives (pitted, halved)
1/3 cup red onion (sliced)
1 garlic clove (minced)
1-1/2 tsp fresh rosemary (diced)
1-1/2 tsp fresh thyme (diced)
1/4 tsp essence
kosher salt (to taste)
fresh crack pepper medley (to taste)
2 tsp unsalted sweet European butter

In a small bowl mix together 1 tbsp of the goat cheese, garlic and 2 kalamata olives by mushing them together with a fork until an even paste is formed. Evenly spread this paste over one side of the Lavash bread.

In a medium mixing bowl whisk together eggs, half and half and essence until fluffing.

Preheat oven to broil.

Heat butter in an oven safe 10'' skillet over medium heat.  Once melted and bubbly, add Lavash bread pasted side up and heat for 2-3 minutes. Sprinkle 1/2 of red onions over bread, pour the egg mixture evenly over bread, then sprinkle the remaining red onions over the egg mixture.  Let cook for 4-5 minutes.  

Once egg mixture is beginning to firm up sprinkle with remaining cheeses, olives, rosemary and thyme, then place skillet in the oven and let broil 2-3 minutes (or until eggs are fully cooked through.)

Using a spatula slide Mediterranean Frittata on to plate, sprinkle with salt and pepper and enjoy!

Portuguese Breakfast Burrito

These Portuguese Breakfast Burritos are great for breakfast but perfect for brunch!  I based them off the idea, "What would I make for brunch if I was a Portuguese farmer and gardener."  With that thought in mind I went to cooking up some tasty breakfast grub!  Enjoy!

Ingredients:
Filling
8 corn tortillas (fresh or reheated)
4 large eggs
1/4 tsp essence
1 lemons juice
6.5 oz smoked linguica (sliced)
1/3 of red onion (chopped)
1/2 of white onion (chopped)
1/3 cup cilantro (chopped)
kosher salt (to taste)
fresh crack pepper (to taste)
2 tbsp butter

Toppings
1/2 cup Red leicester (shredded)
Sour cream
Salsa
Avocado
Cilantro

Heat butter in a large skillet over medium heat.  Once melted add all ingredients except eggs and essence, cooking folding constantly for 12-14 minutes.  Move mixture to one side of skillet and add eggs and essence to empty side of skillet. Scramble for 5-6 minutes.  Once eggs are cooked fold all ingredients together and serve hot on heated tortillas with sour cream, salsa and cheese!

Southern Stirred Eggs

These Southern Stirred Eggs are one of my favorite breakfast dishes that Zo whips up in the morning.  I love them so much that I also ask for them for lunch and dinner.  Fancy up your breakfast and try these! Enjoy!

Ingredients
4 eggs
1/4 cup bacon (finely chopped)
1 tbsp white onion (finely chopped)
1 clove garlic (minced)
2 cups fresh spinach
1/2 cup heavy cream
1 sprig fresh rosemary
kosher salt (to taste)
Fresh crack pepper (to taste)

Preheat oven to 305 degrees.

In a small skillet saute bacon for 2-3 minutes over medium-high heat.  Add cream and rosemary, then bring to a simmer. Once simmering remove from heat and let steep for 10 minutes.

In a medium skillet melt butter over medium-high heat.  Once melted saute onion for 5-7 minutes or until softened.  Add spinach, garlic, salt and pepper and cook until spinach is wilted.  Remove mixture from skillet and chop spinach.

Divide spinach mixture among 4 ramekins.  Top spinach with 1 tbsp of bacon/cream mixture per ramekin.  Crack and egg into each ramekin making sure not to break the yolk, then season with fresh crack pepper and kosher salt.  Divide any remaining bacon/cream mixture by drizzling it over the eggs.

Place ramekins in oven and bake for 15-20 minutes (do not let the yolk completely cook!)

Remove from oven and let cool 2-3 minutes before enjoying!

Grilled Calabrese Omelet

We had some grilled onions and Calabresse from a couple of evenings ago and Zo said I should put it in an omelet for us. So I did.  And well. It was good!  Enjoy!

Ingredients:
Omelet
3 eggs
2-3 tbsp half and half
1/3 cup sharp cheddar (shredded)
2 tbsp grilled white onion (chopped)
1/4 cup grilled calabrese sausage (chopped)
1 pinch Francis' Essence
kosher salt (to taste)
fresh crack pepper (to taste)
2 tbsp European butter

Omelet
In a small mixing bowl beat three eggs using a whisk. Whisk in half and half and seasonings.
Add butter to a 10 inch non-stick skillet and heat over medium heat. Once heated add onion and sausage and cook for 3 minutes. Pour egg mixture into skillet covering onion sausage mixture evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese by sprinkling it along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate and serving hot.

Italia Scramble Stackwich

Is this a sandwich, a stack or a scramble?  Well, it is all of them and who cares if it tastes great!  Enjoy this Italia Scramble Stackwich!
Ingredients:
4 slices of grain bread (toasted, optionally buttered)
4 slices pancetta
3 eggs
2-3 tbsp half and half
1/4-1/3 cup chipotle cheddar (shredded)
1 tbsp jalapeno (diced)
1 tbsp red bell pepper (chopped)
1 tbsp yellow bell pepper (chopped)
1 tbsp green bell pepper (chopped)
smoked paparika (to taste)
garlic powder (to taste)
onion powder (to taste)
kosher salt (to taste)
fresh crack pepper (to taste)
1 tbsp 1 tsp olive oil

In a small mixing bowl beat three eggs using a whisk. Whisk in half and half and seasonings. Fold in jalapeno and bell peppers until even.

Heat a 10 inch non-stick skillet over medium heat. Once heated add pancetta slices and cook for 3-4 minutes.  Flip and cook for another 2-3 minutes or until starting to brown and crisp.  Move to a seperate plate and let sit until ready to use.

Leave the pancetta oil in the skillet and add olive oil.  Once oil is heated add egg mmixture and cook for 4-5 minutes.  Start to break up eggs and scramble for the nect 5-7 minutes.  Once eggs are just starting to dry out add your cheese and turn the heat off.  Let cheese melt.

While cheese is melting toast and butter your toast.  once cheese is metled split the scramble between to slices of bread and top with 2 slices of pancetta apiece.  Top with your other slice of toast and enjoy!

"Libby Sauter's" Omelet

This was the omelet that I made for Libby with the hope that she would once again enjoy eating eggs enough to munch them down before a big climb.  Luckly she did enjoy the omelet and has since tried to make the same omelet for herself.  (So we are 1-1, eggs win, smoked salmon loss.)  I hope you enjoy this omelet as much as Libby, Zo and I did!

Ingredients:
Omelet
3 eggs
2-3 tbsp half and half
1/3 cup chipotle cheddar (shredded)
2-3 tbsp aged white cheddar (shredded)
1 tbsp jalapeno (diced)
1 tbsp red bell pepper (chopped)
1 tbsp yellow bell pepper (chopped)
1 tbsp green bell pepper (chopped)
smoked paparika (to taste)
garlic powder (to taste)
onion powder (to taste)
kosher salt (to taste)
fresh crack pepper (to taste)
2 tbsp white truffle oil

Topping
3 slices of avacado
2 tsp black truffle oil
Kosher salt (to taste)
fresh crack pepper (to taste)

Topping
Rub avacado slices with black truffle oil, sprinkle with fresh crack pepper and kosher salt and site to side until ready to serve omelet.

Omelet
In a small mixing bowl beat three eggs using a whisk. Whisk in half and half and seasonings.
Add white truffle oil to a 10 inch non-stick skillet and heat over medium heat. Add jalapeno and bell peppers and cook for 5-6 minutes stirring often.  Pour egg mixture into skillet covering vegetables evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese by sprinkling it along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate, topping with avacado slices and serving hot.

Flounder Scramble

When waking up from a nice long day of fishing what better way is there to start a new day with some of the prior days catch? None in my opinion!  Whether you or someone else caught the flounder you are sure to enjoy this flounder scramble!

Ingredients:
1 flounder fillet
2 eggs
2 tbsp olive oil
1 tbsp white truffle oil
1 lemons freshly squeezed juice
1 tsp fresh baby dill (diced)
2 tbsp yummy sauce
fresh crack pepper (to taste)
kosher salt (to taste)

In a small skillet heat oils and lemon juice together over medium heat.  Once heated sprinkle pepper and salt over flounder and cook for 6-7 minutes.  Using a wooden spatula break flounder into small pieces and then whisk in 2 eggs eggs.  Cook for 5-7 minutes stirring often until scramble is formed and cooked to your liking.

Move scramble to plate and sprinkle dill over the top.  Serve with yummy sauce on the side or over the top of the scramble and enjoy!

Lobster Dill Havarti Omelette

Difficulty: 1

Easy Lobster omelet! Enjoy!

Ingredients:
3 large eggs
2-3 tbsp half and half
1 (3oz) lobster tail (Peeled and chopped)
1/2 cup dill havarti (shredded)
3 tbsp fresh chives (chopped)
1/2 tsp fresh lemon juice
1/4 tsp hot sauce
pinch of garlic powder
pinch of smoked paprika
kosher salt (to taste)
fresh crack pepper (to taste)
1 tbsp 1 tsp unsalted butter

In a small mixing bowl beat three eggs using a whisk. Whisk in the half and half, chives salt and pepper.

In a small bowl mix together lobster, lemon juice, hot sauce, garlic powder and smoked paprika. Add 1 tbsp butter to a 10 inch non-stick skillet and heat over medium heat until butter has fully melted. Now add the lobster tail mixture for 4-5 minutes.

Add 1 tsp of butter to skillet and move all of the lobster mixture to one side of the skillet. Make sure lobster mixture is evenly over that half of the skillet. Now pour egg mixture into skillet evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese by placing it along one side of the omelet (the side with the lobster mixture. Let cook 3-4 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 1-2 minutes.

Slide omelet onto a warm plate and enjoy!


Flapjack Burgers

We had left over unseasoned burger patty mixture from the night before and I figured since it was brunch we should make up some breakfast type burgers!  At first I was going to make chicken fried steak breakfast burgers with gravy and then I decided to just make it easy.  After making these up I found out online that they are pretty common but every recipe is very different.  Since they are so common I suggest that you try these out.  I tried to get my parents to but they just gave me looks of disgust.  It is too bad really because these flapjack burgers are yummy! Enjoy!

Ingredients:
Burger Patty
1/2 lb ground sirloin Angus beef
1/2 lb ground chuck beef
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp white powder
1/4 tsp onion powder
1/8 tsp de arbol chile powder
1/8 tsp cumin

Flapjack Burger
maple syrup (optional)
4 deli bacon slices
8 of Zo's buttermilk pancakes (hamburger bun sized)
4 large eggs

Burger Patties
Mix beef and seasonings together in a medium bowl and let site for 10 minutes.

Preheat grill to medium.

Separate patty mixture into 4 servings and form 1/4 inch patty by rolling each serving into a ball and then pressing flat.  Place patties on heated grill and cook 3-4 minutes on each side or until desired doneness is reached.

Flapjack Burgers
Fry 4 slices of bacon in a medium non stick pan over medium high heat for 7-10 minutes or until crisping.  Remove bacon from pan, cut in half and let sit to side until ready to use.  Clean out all but 1 tbsp of bacon grease.  Place pan back on burner and fry 4 eggs in the grease for 5 minutes (prepare the eggs your desired way, we liked ours over easy.)

Place burger patty on one buttermilk pancake and top with 2 halves of bacon and an egg.  Top off with another pancake and here is the hard part... Decide if you want maple syrup drizzled over the flapjack burger, inside the burger over the bacon or not at all.  I preferred it without and Zo preferred it over the bacon but it really is tasty either way.  Enjoy!

Francis' BLT

Zo told me she wanted a BLT for dinner, so I took the simple BLT and turned it into a gourmet sandwich worth drooling over!  I did this by upping the grade of ingredients usually used, as well as switching out cheddar jalapeno fuccatio for your every day sliced bread.  Throw in some Italian pancetta, toast the focaccia and get ready for heaven in you mouth!

Ingredients:
1 loaf Cheddar Jalapeno focaccia (preparation directions below)
2-3 tbsp mayonnaise
4 slices hickory smoked bacon (crisped)
4 slices pancceta (crisped)
4 slices vine ripe tomato (1/4 inch thick)
4 slices romaine lettuce
fresh crack pepper medley

Fucaccia bread
Take either the tomato you will be slicing or a slice of the tomato and lay it on the fucaccia.  Using a bread knife cut a little wider slice than the tomato.  Now carefully slice the fucaccia into two separate slices.  Repeat for second sandwich.  Toast fucaccia slices at 300 degrees for 4-5 minutes.

BLT
Spread mayonnaise evenly over the inside of all four slices of fucaccia and then crack pepper over mayonnaise.  Lay down slices of romaine lettuce, then bacon, then tomato and finally pancetta before topping with the slice of fucaccia with the Cheddar jalapeno topping.  Serve and enjoy!

Soyrizo Cilantro Omelet

Zo and I were trying to come up with an easy to make protein packed omelet that also had great flavor.  The end result is the Soyrizo Cilantro Omelet! Enjoy!

Ingredients:
3 large eggs
2-3 tbsp half and half
1/3-1/2 cup habanero jack (shredded)
3 tbsp soyrizo
1 tbsp fresh cilantro (diced)
Kosher salt (to taste)
Fresh crack pepper medley (to taste)
1/2 tbsp unsalted butter

In a small mixing bowl beat three eggs using a whisk. Whisk in half and half, soyrizo, cilantro and seasonings.

Add butter to a 10 inch non-stick skillet and heat over medium heat until butter has fully melted. Wait 1 minute and then pour egg mixture into skillet covering evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese by placing it along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate and serving hot.

Apple Fritters (for Breakfast or Dessert)

Zo and I had a bunch of apples from going to Apple Hill and we had to do something with them.  You can only have so many pies and dumplings before you have to branch out top something new. I was going to make Apple Beignets but decided I did not fill like rolling out the dough and cutting it.  So I went the lazy route of making fritters.  If you are looking for something a little different I highly suggest going with the optional aged white cheddar in the fritters.  It really gives the fritters a fun depth that compliments the sweetness perfectly. Enjoy!

Ingredients:
3/4 cup apples (peeled, cored, chopped)
vegetable or peanut oil


Dry
1 cup cake flour
1 tbsp brown sugar
1 tsp baking powder
1 tsp ground cinnamon


Wet
1 egg (beaten)
1/3 cup half and half
4 tsp sweet unsalted European butter (melted)
3 tbsp sour cream
1 tsp volcanic lemon juice
1/4 tsp vanilla extract
Optional
Confectioner's sugar (sprinkled over the top)
Optional (3 tbsp - 1/4 cup aged white cheddar)

Mix dry ingredients in a medium mixing bowl.  Mix wet in a separate mixing bowl.  Fold dry into wet ingredients until smooth and then fold in apples (and cheese if using).  


In a deep sauce pan heat oil over medium heat.  Once heated use a tablespoon to drop dollops into oil and cook 2-4 minutes or until golden on both sides. Remove fritters as they are done and place on a plate covered in paper towels to drain. Dust with confectioner's sugar and serve warm.

Voila Breakfast Sandwich

I found it!  The Voila Breakfast Sandwich is a great way to wake up your taste buds and send them on a trip around the world! Enjoy!

Ingredients:
3 eggs
1 tbsp yummy sauce
two pinches white pepper
two pinches fresh thyme (diced)
two pinches fresh oregano (diced)
2 tsp Gouda (shredded)
2 tsp Big red cheddar (shredded)
2 1/8 inch slices pancetta
2 buttery buttermilk biscuits (cut in half to make buns)

In a small mixing bowl whisk together eggs, yummy sauce, white pepper, thyme and oregano until even.

Add pancetta slices to a 10 inch non-stick skillet and fry over medium heat crisping on both sides.  remove pancetta from skillet and remove all by 2 tsp of oil by wiping the inside of the skillet with a paper towel.

Pour egg mixture into skillet covering evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese by sprinkling it it along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate.  Cut omlete in half with the spatula and place 1/2 on to each biscuit, top with a slice of crisped pancetta and serve hot.

Francis' Bayou Eggs

Do you ever want eggs for breakfast but want them fancy but don't want an omelette? Well every now and then I get that feeling, so I decided to make these! I just took out a lot of half used items I had took the ones that sounded good for breakfast and made these off the cuff. The key to these really tasting great is to make sure you buy some nice and moist smoked salmon and keeping it that way. You do not want it to dry out or they will just taste horrible. So I made sure to soak the salmon so when I cooked it on the eggs it would stay moist and tasty. Enjoy!

Ingredients:
Eggs
3 large Eggs
1 Jalapeno (seeded, diced)
1 1/2 tsp green onion (diced)
1 large clove garlic (minced)
2 tbsp sharp aged cheddar (shredded)
2 tbsp pepper jack (shredded)
2 1/2 tsp unsalted butter
4 pinches of essence (one per egg)
coarse sea salt (to taste)
Fresh crack pepper medley (to taste)

Salmon
1/4 cup smoked salmon
1/2 of a lemons freshly squeezed juice
1-2 pinches cayenne
1-2 pinches cumin
pinch of paprika
pinch of smoked paprika

Salmon
Tear salmon into pieces and place into a small bowl, squeeze 1/2 of a lemons juice over salmon, sprinkle cayenne, cumin and both paprikas over salmon and mix well. Let soak until ready to use.

Mix both cheese together in a small bowl and let sit until ready to use.

In a large skillet heat butter over medium heat. Once melted spread out jalapeno, green onion and garlic and cook for 1-2 minutes. Form four even half dollar size piles of garlic in your skillet evenly spaced apart. Break an egg over the center of each pile, pierce the the yolk of each egg and sprinkle a pinch of essence over each egg (you do not have to pierce the yolk, I just like to on these eggs.) Cook for 1-2 minutes, then flip, sprinkle with pepper and salt, top each egg with 1/4 of the salmon mixture and then spread 1/4 of the cheese over each egg, cover and continue to cook for an additional 1-2 minutes or until cheese has fully melted. Serve hot with a little ketchup or sriracha sauce, enjoy!

Patty Pan Squash

I tossed this together as a side for dinner because Zo said, "We have those patty pan squashes you told me to buy and you have not used them." So I made them up but because we liked them so much we decided to save some for breakfast the next day. They were very tasty with both meals; Zo scarfed hers down so fast you would have never know they were even on her plate! That is really unusual for her, usually I am the one that you would think never ate because my food is gone as soon as it hits my plate! I really hope you enjoy!

Ingredients:
2 patty pan squashes (thinly sliced then halved long ways)
1/4 cup white onion (chopped)
1 1/2 slices prosciutto (diced)
1 tbsp 1/4 tsp fresh basil (diced)
1 1/4 tsp Italian volcanic lemon juice
2-3 tsp unsalted Irish butter
1/4 tsp garlic powder
1/8 tsp smoked paprika
pinch of red pepper flakes
fresh crack pepper (to taste)
kosher salt (to taste)

Mix together lemon juice, paprika and garlic powder in a medium bowl. Toss squash in mixture and sit to side until read to use.

Melt butter over med low heat. Once melted add onion and prosciutto and cook for 7-8 minutes stirring occasionally. Add soaked squash mixture and cook for 3 minutes stirring often. Add basil, kosher salt and fresh crack pepper and cook another 2-3 minutes. Serve hot and enjoy!
