Buttermilk Pancakes with Apple Cinnamon Syrup

I was really craving Apple Cinnamon Pancakes. I brought them up to Zo and she said, "What about buttermilk pancakes?" I exclaimed, "Yum, with apple cinnamon syrup!" She inquired, "How do you make that?" I admitted, "I have no clue, like cobbler syrup maybe?" We did not have a clue as to what we were doing but here is the syrup we came up with. It was quick, easy and delicious. This was the perfect breakfast for our hungry morning tummies.

Ingredients:
Pancakes
dry
1 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tbsp sugar
wet
1 cup butter milk
1 egg
3 tbsp melted butter

Syrup
1/4 cup sugar
1/2 cup apple sauce
1 tsp Cinnamon
1/4 water
1/2 tsp lime juice
1 tbsp butter
1 1/2 tsp corn starch

Pancakes
In a medium bowl whisk together all dry ingredients. In a small bowl whisk together all wet ingredients. Pour wet ingredients into dry and whisk till just combined.

Melt a few pads of butter in a medium skillet over medium heat. Pour 1/4 of batter per pancake into skillet and cook until bubbles appear, then flip and cook until golden brown (about 3-4 minutes per side.)

Syrup
Combine all ingredients in a small sauce pan (except butter) and bring to boil over medium heat. Let boil for 2 minutes, then turn down heat to simmer and gently whisk in butter.

Once pancakes are done drizzle desired amount of syrup over pancakes and serve warm!
