Mexofu Casserole

Tofu + A Mexican Themed Casserole = Mexofu Casserole. It almost sounds like a bad Mexican Kung Fu movie. I wonder if such a thing exists? I would love to see guys in Sombrero's flying around Crouching Tiger Hidden Dragon style! Even better a Spaghetti Western Kung Fu flick! Actually Zo and I have seen a Spaghetti Western Kung Fu flick. I can not think of the name of it but man was it crazy! Strange and awesome at the same time! Just like this recipe! You have to remember that Zo was once a Vegetarian and when she was one she loved this meal! Now personally I think this meal is good... But it is even better with some Chorizo thrown into the mix! So if you are a veggie head and feel like sticking to your vegetarian roots make this recipe without the chorizo. If you have been thinking, "Man! I want some meat!" Then toss in some chorizo and fire up those forgotten taste buds! Either way you are going to enjoy this one!

Ingredients:
Casserole
6-8 8 inch tortillas (we used uncooked but you can use store bought)
2 1/2 cups sharp aged cheddar (shredded)
2 medium green onions (chopped)
1 cup black olives (diced)
1 pint sour cream
1/4 cup cilantro (chopped)
(optional 1/4 lb chorizo)

Sauce
28 oz crushed tomatoes
1 medium yellow onion (chopped)
1 Serrano pepper (seeded and chopped)
2 cloves garlic (minced)
1 tbsp chili powder
1/4 tsp smoked paprika
1 1/2 tsp cumin
1/2 tsp sea salt
1 lb firm tofu (mashed)

Sauce
In a medium skillet heat olive oil over medium heat. Once heated add onion and garlic, sauteing for 5-7 minutes or until turning translucent. Fold in the rest of the sauce ingredients, turn heat to medium low and simmer for 20 minutes.

Casserole
Preheat oven to 350 degrees.

Lightly butter a 14 x 9 3/4 lasagna baking dish. Spread 1/2 of the sauce evenly over the bottom of the dish and then cover with tortillas. (if using the optional chorizo add it to this layer.) Now add one half of the cheese, one half of the green onions and one half of the black olives, making sure to spread them around evenly. Spread the other half of the sauce for the next layer and then cover with tortillas. Evenly distribute the remaining ingredients to create your final layer.

Bake uncovered for 20-25 minutes or until cheese is fully melted. Remove from oven and let cool for 5 minutes before serving hot!
