Skillet Breakfast for Two

Zo went out with her father and brother for dinner so I canceled my fancy meal and decided I wanted a breakfast skillet. I made this with intentions of eating the second half the next morning... it just did not make it that long. I admit it was too much to eat but I just could not stop myself. So make sure you split up this breakfast before you eat it all! (Note: Skillet in picture was used for picture only, a larger skillet was used to cook meal)

Ingredients:
1 large red potato (cut into shoe string slices)
2 eggs
5 slices pastrami
3 tbsp mozzarella (finely shredded)
3 tbsp sharp cheddar (finely shredded)
2 tbsp fresh chives
3 tbsp fresh Italian parsley
1/8 tsp smoked paprika
1/8 tsp Cayenne pepper
1/8 tsp garlic powder
fresh crack pepper (to taste)
kosher salt (to taste)
1 tbsp sweet European butter

Melt butter in a large skillet over medium high heat. Once melted add potatoes, salt and pepper, cooking for 13 minutes, stirring every 2-3 minutes. Now add pastrami and continue to cook for and additional 10 minutes, stirring every 2 minutes. Mix in chives and parsley then push to one half of skillet. Turn heat to medium, add eggs and seasoning (including salt and pepper,) break yolks and cook for 5 minutes. After 5 minutes chop up and fold egg using a wooden spatula, cook for 30-40 more seconds then mix together with potatoes and pastrami. Move to plate (or in my case a fancy skillet,) sprinkle with cheese and serve hot. Enjoy!
