Ybor City Grilled Chicken Sandwiches

My mother loves chicken so much she once told me that she would eat it everyday for every meal. Now that is love for chicken! For Mother's day we had plans to head over to my parents and I decided I would make a chicken recipe for her. I did a test run a few days before Mother's day and made adjustments accordingly. I liked the lemonaise, I liked the sauce, I liked the buns, I just did not like how thick the chicken breast was or how it hung off the bun. So for my Mother I meat hammered the chicken down and sliced the chicken breast into square patties before grilling. With the leftover chicken I trimmed off I made a separate chicken sandwich for unexpected company. You do not need to slice the chicken into squares. I probably will not in the future, I just wanted my Mom to have an attractive meal. Zo and I both agreed thought that it was way better meat hammered down. It was just a little to thick otherwise. (If you like yours thick then in lieu of meat hammering the chicken down. Just poke holes all over the chicken with a fork, microwave on low for about a minute, then rub in the sauce and then grill as stated below.) I hope you enjoy these as much as we did!

Ingredients:
4 chicken breast fillets (about 2 lbs total)
4 slices of deli cut bacon (crisped)
2 ripe avocados (peeled, pitted and sliced)
1/4 tsp cumin
4 potato buns
4 slices Monterey jack (optional)

Sauce
1 tbsp 2 1/2 tsp lemon juice
1 tbsp 1 tsp white truffle oil
2 tbsp unsalted European butter (softened)
4 cloves garlic (minced)
1/4 cup fresh cilantro (diced)
2 small green onions (diced)
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp onion powder
1/8-1/4 tsp Cayenne pepper
1/4 tsp Worcestershire sauce
kosher salt (to taste)
crack pepper (to taste)

Lemonaise
1/4 cup 1 tbsp mayonnaise
1 tbsp 1 tsp creole mustard
1 tsp lemon juice
1/2 tsp garlic powder
1/2 tsp Cayenne

Sauce
Mix sauce together until even.

Lemonaise
Mix all ingredients together and refrigerate until ready to use.

Chicken Burgers
Prepare bacon by frying it and then slicing it in half. Slice avocado and sprinkle cumin over slices.

Preheat a grill to medium high.

Place two chicken breast fillets at a time into a gallon ziploc and meat hammer down to 1/4 inch thickness. Once all fillets are meat hammered down rub in 1/4 of sauce into chicken and place breast on bottom grill.

Grill chicken breasts for about 4 to 5 minutes, then flip chicken and spoon another 1/4 of sauce evenly over chicken. Cook for another 4 to 5 minutes or until chicken is fully cooked through and remove from grill. Spoon the remaining 1/2 of sauce over chicken (lay cheese slices over breast if using) and prepare your buns by toasting them 30-45 seconds over the hot grill.

Spread desired amount of lemonaise on the inside of each bun (about a tsp a piece works well.) Lay 1/4 of avocado slices onto each bottom bun, then lay down two of your bacon strip pieces and finally top with a chicken fillet. Serve while still hot and enjoy!
