"The Marie" Hot Sandwich

I was in the middle of doing something on the house, I don't remember what exactly. I just remember saying yes to a whole lot of things she asked if I wanted on my sandwich. I am glad I said yes to everything because it was one hell of a sandwich. It was so good that after I ate it I said, "You need to make those again so I can take some pictures!" So she made them again a few days later for dinner and we got some pictures. Enjoy!

Ingredients:
4 slices Russian rye (or bread of your choice)
4 slices aged white cheddar
8 slices calabrese salami
8 slices gourmet deli pepperoni
1/2 cup green bell pepper (sliced)
1/4 cup red onion (sliced)
1/4-1/3 cup baby spinach leaves (optional)
fresh crack pepper (optional)
2 cloves garlic (minced, optional)
1 tsp Brummel and Brown

Spread
1 tsp hummus
1/2 tsp mayonnaise
1/2 tsp spicy brown mustard
1 tbsp black olives (diced)

Spread
Mix all ingredients together in a small bowl and sit to side until ready to use.

Sandwich
Melt Brummel and Brown in a medium skillet over medium heat. Once melted add Salami, pepperoni, onion, green bell pepper, (garlic and pepper if using,) cooking until onions become translucent (5-7 minutes.)

Toast bread at 400 degrees 1 minutes per side (or until desired crispness,) and spread 1/4 of spread over one side of each slice of toasted bread. Lay a slice of cheddar onto each slice of bread and then split the meat and vegetables mixture between both sandwiches. (Top mixture with 1/2 of baby spinach per sandwich if using.) Top with bread and serve while the filling is still hot! Enjoy!
