Salmon Salad Sandwich

I originally made this back in January. We received a lot of smoked salmon for X-mas and I used it in different ways. I made a Salmon Salad with some of it and have been tinkering with the recipe since. I finally have it perfected! If you can not find crack pepper smoked salmon just use a little extra crack pepper but the smoked crack pepper salmon really is better (in my opinion) to use. I have not tired it but I think this Salmon Salad with a little spinach would be great in a wrap! Enjoy!

Ingredients:
3 oz crack pepper smoked Salmon
2 tbsp green bell pepper (diced)
2 tbsp red onion (diced)
2 cloves garlic (minced)
1/4 cup 1 tbsp mayonnaise
2 tsp Dijon stone ground mustard
1 tsp clover honey
1/4 tsp soy sauce
1 1/2 tsp fresh baby dill (diced)
1/8 tsp garlic salt
1 pinch cumin
1 pinch ground ginger
fresh crack pepper (to taste)
pepper jack (slices optional)

Remove skin from salmon meat and break meat into flakes. Gently mix all ingredients together in a small bowl until evenly mixed, cover and chill (at least 10 minutes) until ready to serve. Serve on potato bread with a deli slice of pepper jack for even more flavor!
