This easy Orzo salad is great to searve at BBQs! It is a little tangy, a little zangy and a little spicy. It is so full of flavor that you will be suprised how fast it is gone. Not bad for something I just tossed together 15 minutes before company showed up!
2/3 cup uncooked orzo
1/3 cup 1 tbsp mayonnaise
2 tbsp Sriracha (2 tsp if you don't like a little spice)
1 tbsp fresh lime juice
3 tbsp fresh cilantro (chopped)
2 tbsp fresh Italian parsley (chopped)
2 tbsp red onion (diced)
Kosher salt (to taste)
fresh crack pepper (to taste)
Cook orzo according to packages instructions. Once cooked, strain and run cool water over orzo until it is about room temperature. Pour orzo into a bowl and mix the remaining ingredients into orzo. Chill until ready to serve.
