Grilled Sweet Potato Wedges

I originally tried to make these for a Memorial day BBQ I went to. Unfortunately I burned them on the pizza stone and they had to be discarded. It was getting warm outside so I decided to cook them on the grill this go around. Fresh off the grill they were gone before it was even time to eat, so they must have been pretty good!

Ingredients:
Wedges
3 sweet potato (cleaned, cut into wedges)
3 tbsp black truffle oil
1/4-1/2 tsp Cayenne
1 tsp garlic powder
2 tsp liquid smoke
kosher salt (to taste)
fresh crack pepper (to taste)

Dip
1/4 cup ketchup
1/2-2 tsp fresh crack pepper (I like a little more Zo likes a little less)

Preheat grill to medium heat.

In a very large mixing bowl toss potatoes with all other ingredients until coated well. Place wedges over top and medium grills. Grill for 7 minutes watching for any flame flare ups. If there is a flare up have a water sprayer handy so that you can mist the flames and keep them under control. You don't want the wedges to get burned. After 7 minutes transfer wedges from top grill to medium grill and the wedges on the medium grill to the top grill. Flip wedges and cook for additional 7-9 minutes or until cooked through and firming up.

Serve hot off the grill with ketchup mixture and enjoy!
