Patty Pan Squash

I tossed this together as a side for dinner because Zo said, "We have those patty pan squashes you told me to buy and you have not used them." So I made them up but because we liked them so much we decided to save some for breakfast the next day. They were very tasty with both meals; Zo scarfed hers down so fast you would have never know they were even on her plate! That is really unusual for her, usually I am the one that you would think never ate because my food is gone as soon as it hits my plate! I really hope you enjoy!

Ingredients:
2 patty pan squashes (thinly sliced then halved long ways)
1/4 cup white onion (chopped)
1 1/2 slices prosciutto (diced)
1 tbsp 1/4 tsp fresh basil (diced)
1 1/4 tsp Italian volcanic lemon juice
2-3 tsp unsalted Irish butter
1/4 tsp garlic powder
1/8 tsp smoked paprika
pinch of red pepper flakes
fresh crack pepper (to taste)
kosher salt (to taste)

Mix together lemon juice, paprika and garlic powder in a medium bowl. Toss squash in mixture and sit to side until read to use.

Melt butter over med low heat. Once melted add onion and prosciutto and cook for 7-8 minutes stirring occasionally. Add soaked squash mixture and cook for 3 minutes stirring often. Add basil, kosher salt and fresh crack pepper and cook another 2-3 minutes. Serve hot and enjoy!
