These are some of the best refried Black Beans I have ever had! Zo tossed them together one night and I ended up licking the sauce pan clean after tasting them! I had them on a burrito, chips, in a quesadilla and just by themselves. Enjoy!

Ingredients:
1/4 cup onion (chopped)4 cloves garlic (minced)
2 tbsp green bell pepper (chopped)
1 purple jalapeno (seeded, diced)
saute in 2 tbsp olive oil with pepper, salt and cayenne
15 oz can black beans (drained)
1/3 cup water
1 bay leaf
1/4 tsp oregano
1/4 tsp paprika
1 tsp tomato paste
1/4 tsp pepper flakes
In a medium sauce pan heat 2 tbsp of olive oil over medium high heat. Once heated add onion, garlic, bell pepper, jalapeno, salt, pepper and cayenne and saute for 5-7 minutes, stirring often. Add remaining ingredients to sauce pan and bring to a boil. Continue to boil until almost all of the water evaporates away (7-13 minutes and then lightly mash beans. Serve hot and enjoy!
