Prosciutto Arugula Wraps

I was brain storming for a prosciutto party a few months down and this is one of the ideas I jotted down.  Zo and I were looking for something easy to much down on and we happen to have all the ingredients needed for these so we decided to try them out. They came out not only delicious but beautiful looking.  The colors contrast almost as well as the flavors!  I suggest them as a starter to a lighter flavored dinner!

Ingredients:
Wraps
3 slices Picante Prosciutto (sliced in half long ways)
1/3 cup Arugula
2 oz Goat cheese
1 tbsp 1 tsp pine nuts
1 tbsp 1/2 tsp chives
fresh crack pepper (to taste)

Raspberry Vinaigrette Reduction
1/3 cup balsamic
1/4 cup raspberries (mashed)
1/4 tsp sugar
1/8 tsp black pepper

Reduction
Add all ingredients to a small sauce pan and heat over medium heat until reduced by 1/2 and thickened.

Wraps
Mix together goat cheese, pine nuts, chives and pepper in a small bowl and make into 6 even elongated lumps.  Separate the arugula into 6 even bunches. At the end of one of the slices of prosciutto place one of the bunches of arugula and then lay a lump of the cheese mixture.  Roll each slice of prosciutto tightly around the filling and place on a tray.  Serve with the reduction as a dip or drizzled over the top and en
