Sunday Pot Roast

I think a great way to enjoy a lazy Sunday is with a Pot Roast.  You can laze around without the need to check on what is cooking.  Then when your stomach starts growling after a hard day of doing nothing, supper is ready to serve!  I hope you enjoy our simple Sunday roast!

Ingredients:
3 3/4 lbs beef chuck roast
1/2 cup onions (chopped)
1/4 cup green bell pepper (chopped)
1 jalapeno (diced)
1 cup Bella mushrooms (sliced)
8 red potatoes (quartered)
8 carrots (sliced into chunks)
3 cloves garlic (minced)
1 8 oz can tomato sauce
1 cup beef or chicken stock
1 sprig rosemary
1 tbsp butter
kosher salt (to taste)
fresh crack pepper (to taste)

Heat butter in a cast iron Dutch oven over medium heat until melted and bubbling. Add beef chuck and brown on all sides (7-12 minutes total time.). Remove roast from Dutch oven and place on baking sheet. 

Saute onion, jalapeno, green bell pepper, and garlic in Dutch oven until tender. Stir in tomato sauce and broth. Add mushrooms, salt, pepper and the beef chuck to the pot, reduce heat to low, cover and let simmer for 2 hours. Add potatoes, carrots and rosemary sprig to mixture, cover and continue simmer for 30-45 minutes or until tender. 

Slice roast, serve with veggies and biscuits, Enjoy!
