Francis' BLT

Zo told me she wanted a BLT for dinner, so I took the simple BLT and turned it into a gourmet sandwich worth drooling over!  I did this by upping the grade of ingredients usually used, as well as switching out cheddar jalapeno fuccatio for your every day sliced bread.  Throw in some Italian pancetta, toast the focaccia and get ready for heaven in you mouth!

Ingredients:
1 loaf Cheddar Jalapeno focaccia (preparation directions below)
2-3 tbsp mayonnaise
4 slices hickory smoked bacon (crisped)
4 slices pancceta (crisped)
4 slices vine ripe tomato (1/4 inch thick)
4 slices romaine lettuce
fresh crack pepper medley

Fucaccia bread
Take either the tomato you will be slicing or a slice of the tomato and lay it on the fucaccia.  Using a bread knife cut a little wider slice than the tomato.  Now carefully slice the fucaccia into two separate slices.  Repeat for second sandwich.  Toast fucaccia slices at 300 degrees for 4-5 minutes.

BLT
Spread mayonnaise evenly over the inside of all four slices of fucaccia and then crack pepper over mayonnaise.  Lay down slices of romaine lettuce, then bacon, then tomato and finally pancetta before topping with the slice of fucaccia with the Cheddar jalapeno topping.  Serve and enjoy!
