Barato Alcapco Steak

This is my less expensive version of Alcapco steak.  I use New York strips that are a little more lean compared to rib eye steaks and then I make a rich but simple topping using onions cooked in bacon grease and butter.  For my more expensive version I use marbled rib eyes topped with a lighter but more diverse topping that includes onion, shrimp and cilantro.  Both are very tasty and while very much inspired by the same flavors they really feel like totally different meals.  I hope you enjoy this version of my Alcapco steak and then try my other version to compare!  Enjoy!

Ingredients:
Steak
2 new york strips (oiled pepper and salted)
kosher salt (to taste)
fresh crack pepper (to taste)
2 tsp olive oil

Topping
2 tbsp Louisiana hot sauce
1/2 cup white onion (chopped)
1/2 of a lime's freshly squeezed juice
1 tbsp butter
1 tbsp bacon grease

Steak
Preheat grill to medium high heat.

Rub olive oil over both steaks.  Crack fresh pepper and sprinkle kosher salt lightly over both sides and rub in. Place steaks on lower grill rack for 3-4 minutes. Flip steaks and cook for an additional 3-4 minutes or until desired doneness.

Remove steaks from grill, cover and let sit for 5 minutes.

Topping
Heat bacon grease and butter in a small skillet over medium heat.  Once heated add onion hot sauce and lime juice.  Cook down for 12-15 min, stirring frequently.

Spoon topping over steaks and enjoy!
