After making grilled shrimp with a grapefruit and butter baste I decided that I had to try it on some simple kabobs that turned out simply delicious. Enjoy grilling up these Sweet Sausage Citrus Kabobs!
3 sweet Italian sausages (sliced into pieces)
1/3 of a red onion (cut into chunks)
1/3 of a red bell pepper (cut into chunks)
1/3 of a green bell pepper (cut into chunks)
1/3 of a yellow bell pepper (cut into chunks)
1 yellow squash (sliced into thick chunks
1 zucchini (sliced into thick chunks)
1/2 of a freshly squeezed grapefruit juice
1/4 cup butter (melted)
1/2 tsp hot paprika
1/2 tsp garlic powder
kosher salt (to taste)
fresh crack pepper (to taste)
Mix together all ingredients in a small bowl until even. Sit to side until ready to use.
Thread kabob ingredients evenly onto 4 skewers.
Preheat grill to medium heat, baste skewers and place on lower grill cooking for 5-7 minutes. Baste skewers, turn, baste and cook for an additional 5-7 minutes. Once again baste, turn, baste and cook for a final 5-7 minutes or until done. Baste one last time and then serve! Enjoy!
