Italia Scramble Stackwich

Is this a sandwich, a stack or a scramble?  Well, it is all of them and who cares if it tastes great!  Enjoy this Italia Scramble Stackwich!
Ingredients:
4 slices of grain bread (toasted, optionally buttered)
4 slices pancetta
3 eggs
2-3 tbsp half and half
1/4-1/3 cup chipotle cheddar (shredded)
1 tbsp jalapeno (diced)
1 tbsp red bell pepper (chopped)
1 tbsp yellow bell pepper (chopped)
1 tbsp green bell pepper (chopped)
smoked paparika (to taste)
garlic powder (to taste)
onion powder (to taste)
kosher salt (to taste)
fresh crack pepper (to taste)
1 tbsp 1 tsp olive oil

In a small mixing bowl beat three eggs using a whisk. Whisk in half and half and seasonings. Fold in jalapeno and bell peppers until even.

Heat a 10 inch non-stick skillet over medium heat. Once heated add pancetta slices and cook for 3-4 minutes.  Flip and cook for another 2-3 minutes or until starting to brown and crisp.  Move to a seperate plate and let sit until ready to use.

Leave the pancetta oil in the skillet and add olive oil.  Once oil is heated add egg mmixture and cook for 4-5 minutes.  Start to break up eggs and scramble for the nect 5-7 minutes.  Once eggs are just starting to dry out add your cheese and turn the heat off.  Let cheese melt.

While cheese is melting toast and butter your toast.  once cheese is metled split the scramble between to slices of bread and top with 2 slices of pancetta apiece.  Top with your other slice of toast and enjoy!
