Southwest Tri-tip Sandwich

We had some Tri-tip so we cooked it up and tossed together these tasty Southwest Tri-tip sandwiches.  Enjoy!

Ingredients
Tri-tip Sandwich
1 (2 lb) tri-tip roast, trimmed
8-10 Cibatta bread (sliced into sandwich rolls)
10 slices Smoked cheddar Cheese
1 red onion (sliced)
1 tomato (sliced)
wasabi horseradish
mayonnaise
mustard
BBQ sauce

Tri-tip Marinade
1/4 cup fresh cilantro (chopped)
1 small red onion (diced)
6 garlic cloves (minced)
1 jalapeno (diced)
1/2 cup fresh lemon juice
1/2 cup light beer
2 tbsp cup white sugar
2 tsp cumin
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp smoked paprika
1 tbsp red pepper flakes
1 tbsp fresh crack pepper medley
1 tbsp kosher salt

Marinade
Combine all ingredients except the tri-tip steaks in a medium mixing bowl and stir. Place steaks in a medium baking dish or a resealable bag. Pour marinade over steaks, seal and chill for six hours.

Tri-Tip
Preheat grill to medium high.

Place steaks on grill and grill for 10-15 minutes.  Flip the tri-tip and continue to cook it for another 10-15 minutes or until the desired doneness is reached. Remove steaks from grill, cover and let rest for about 5 minutes before slicing.

Sandwich
Lightly toast cibatta bread on grill for 1-2 minutes. Place desired condiments and toppings on sandwich with tri-tip and enjoy!
