Zo's Poulet Rouge

Zo made this Poulet Rouge (red chicken) and my mother and I could not eat it fast enough.  When I asked her how she made it... I was stunned...  How could something so delicious be so easy to make!  It is always good to be reminded that great meals can be made with little effort!  Enjoy!

Ingredients
Chicken
4 chicken thighs (skin on)

1/2 sweet onion (sliced into 1/2 inch wedges)
1/2 red onion (sliced into 1/2 inch wedges)


Rub
1 tbsp 1 tsp sweet paprika
1/2 tsp smoked paprika
1/4 tsp hot paprika
1/4 tsp cayenne
1/2 tsp cinnamon
1 tsp kosher salt
fresh crack pepper (to taste)
1 tbsp olive oil

Rub
Mix all ingredients together in a small dish until even.

Chicken
Pre-heat oven to 475 degrees.

In a medium mixing bowl, evenly massage rub onto all chicken thighs and onions.  Place chicken thigh and onion mixture into baking safe casserole dish. Bake for 35-40 minutes or until chicken is cooked through.

Remove chicken from oven and let cool 7 minutes before serving hot. Enjoy!
