Francis' Baked Pasta

Super simple and super tasty!  What more could you want from a nice Baked Pasta?  Enjoy!


Ingredients:
Pasta
1lb rotini Pasta
1/3 cup fresh basil (chopped)
3-4 green onions (diced)
1 1/2 tbsp Parmesan (freshly grated)
1 1/2 tbsp Ramano (freshly grated)
1 cup grape tomatoes (sliced)
5 slices pancetta (diced, crisped)
kosher salt (to taste)
fresh crack pepper (to taste)

Cheese Sauce Mixture

1/2 cup cream
1 1/2 cup whole milk
1/2 lb gruyere (shredded)
3 oz goat cheese (crumbled)
3.5 oz aged white cheddar (shredded)
1/4 cup butter (softened)
8 oz Neufchatel (softened)

Pasta

Cook pasta according to package directions.

Cheese Sauce Mixture

In a medium sauce pan melt butter over medium heat.  Once melted add cream and milk and heat through (3-4 minutes.)  Gradually and separately in this order add Neufchatel,  goat cheese, swiss and cheddar, gently stirring for 5-7 minutes or until fully melted.

Pasta

Preheat oven to 375 degrees.

Add pasta to a 3 quart baking dish and toss with kosher salt, fresh crack pepper, fresh basil and green onions.  Drizzle the cheese sauce mixture over the noodles evenly.  Spread out grape the grape tomatoes and then sprinkle with Parmesan and Romano cheeses.


Place baking dish in oven on the middle rack and bake at 375 degrees for 35 minutes. Remove and let stand for 5-7 minutes before serving.  Enjoy!
