Open Face Fajita Scramble

Here is a quick little Mexican inspired breakfast for your palates enjoyment.

Ingredients:
Fajita Scramble
2 fresh corn tortillas
3 large eggs
1 tbsp cream
1/8 lb new york style chorizo
1/8 lb chicken thigh or new york strip (shredded)
1/4 tsp ground chipotle chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
1/4 tsp cumin
1 limes juice
1/4 of a white onion
2 cloves garlic
1 tbsp butter
kosher salt (to taste)
fresh crack pepper (to taste)

Topping
1 limes juice
1 green onion (diced)
1 Roma tomato (diced)
1/3 cup fresh cilantro (chopped)
1 jalapeno (seeded, diced)
1/4 cup sharp cheddar (shredded)
1/4 cup jack (shredded)

Whisk eggs with cream in a small mixing bowl until fluffy.

In a medium skillet heat butter over medium heat.  Rub seasonings on chicken or new york strip. Once melted and bubbly add chorizo, chicken (or new your strip,) onion, garlic cumin, chipotle and the juice of one lime.  Cook for 7-8 minutes or until chicken is cooked through.  Push all ingredients to one side and add the egg mixture.  Cook eggs while folding for 4-6 minutes or until your desired "scrambledness" is reached.

In a small bowl toss together green onion, tomato, jalapeno, cilantro and lime juice until even.

Remove skillet from burner and heat both tortillas.  Split meat mixture between both tortillas, then top with cilantro mixture and cheese. Serve hot and enjoy!
