Grande Nachos

Every time I hear, "Lets make nachos," I get excited. Then I see what was really meant are microwaved chips and cheese. If I am lucky there will be some salsa and sour cream to put on top. Now I am not against microwaves, I use them often enough. And sure, nachos can be just some melted cheese over chips. Take five more minutes however and you'll have something ten times more satisfying.

Ingredients:
1/3 cup Brie (pinched off into pieces)
1/2 cup chipotle cheddar (shredded, sharp cheddar can be substituted)
1/2 cup Colby cheese (shredded or if you buy sliced cut or broken into smaller chunks)
1/2 cup zucchini (sliced and quartered)
1/3 cup soyrizo (set out to reach room temperature)
1 green onion (chopped)
1 small Jalapeno (diced)
1 tbsp fresh Italian parsley (chopped)
3 tbsp cilantro (chopped)
Tortilla chips
1/3 cup salsa
2 1/2 tbsp sour cream

Preheat oven to 350 degrees

On a large oven safe plate make an over lapping layer of chips (make sure you can not see the plate under the chips,) then make a layer of the Colby cheese. Make another layer chips that has a smaller circumference than the first layer and then sprinkle around the pieces of brie. Make your last layer of chips with an even smaller circumference, and in this order sprinkle soyrizo, zucchini, jalapeno, chipotle cheddar, green onion and cilantro.

Put nachos in oven on the center rack and bake for 10 minutes or until cheeses have fully melted.

Take nachos out of the oven, drizzle salsa over nachos and then put scoops of sour cream on top.

Serve hot!

  2. Oh nachos... So flavorful makes me want to indulge in it anytime. We don't have tortilla chips here though. What would Ozge do.

  4. Hmm you could use flat bread, you could use just zuccini and squash, you could use tortillas. You never know what will be good till you try it.
