Grilled Peanut Butter and Banana sandwich

This is a fun and easy recipe that is great for early mornings at the campsite or days when you just want a grab and go breakfast for a road trip. You can also convince children that it is a dessert item because they really like them so much!

Ingredients:
1/2 cup peanut butter (I like crunchy)
2 bananas (sliced)
8 slices of your favorite bread
2 tsp of butter per sandwich
Clover honey (optional)

Spread 2 tsp-1 tbsp of peanut butter (depending on how much you like peanut butter) onto one side of each slice of the bread. Lay 1/4 of the sliced banana onto each of four of the slices of bread (optionally drizzle a little honey over bananas as well.) Lay the other four slices of bread onto the tops of the banana/peanut buttered bread.

In a medium skillet over medium high heat melt 1 tsp of butter and then lay a sandwich over the melted butter and cook 5-7 minutes. Lay another 1 tsp of butter in skillet and flip sandwich cooking and additional 5-7 minutes or desired crispness. Repeat with the rest of the sandwiches till done. Serve warm.
