Eggplant Cannelloni

Another addition of Cooking for Fran! Zo made this for me a few months back and I loved it. I loved it so much I asked if we could have it again as soon as I took my first bite! This time she had the idea of grilling the eggplant. I tossed it on the grill and let me tell you, it not only saved 30 minutes of time but it also gave it an interesting outdoor flavor. This simple recipe will amaze you with how easy and flavorful it is! Your company and family are sure to be impressed!

Ingredients:
1 globe eggplant (sliced long ways into 1/4 strips)
5 oz package of goat cheese
fresh crack pepper
olive oil
1 1/2 cup of our sweet marinara sauce (check topping/sauce or use your favorite marinara)
1 tbsp block olives (Optionally mixed into the goat cheese for extra flavor)

Preheat grill to medium high. Once heated lay egg plant strips on grill for 4-5 minutes then flip and cook an additional 4-5 minutes (the eggplant should have grill marks on both sides and be browning.)

Remove eggplant from grill then one by one rub with olive oil, crack fresh pepper on both sides and spoon 1-1 1/2 tsp of goat cheese into center of each strip and roll up egg plant around cheese. Place the cannelloni onto a baking sheet wrapped side down and bake at 350 degrees for 7-10 minutes. Place warm cannelloni on plate and spoon 2-3 tbsp of sweet marinara sauce and serve.
