Zesty Orange Crab Quesadillas

We had some left over crab meat and some oranges that needed to be eaten. So I put them together with cheese because everything pretty much tastes good with cheese, especially these. I know I have posted quesadillas before but they are a great "go to" meal. They are easy to make when you get home late and you're starving. I do have to say these are some of the best I have ever made. I took one bite and immediately interrupted Zo from doing her homework telling her, "Babe you have to take a bite of your quesadilla." She was very pleasantly surprised when she bit into these scrumptious delights!

Ingredients:
1 cup chipotle cheddar cheese (shredded)
1/3 cup Brie
1/2 cup sweet white onion (chopped)
1/3 cup fresh cilantro (chopped)
1 tsp freshly grated orange zest
1 tbsp orange juice
1 cup canned crab meat (drained, imitation crab can also be used)
4 8 inch flour tortillas
1 tbsp olive oil

In a small skillet lightly saute onions in olive oil for 3-4 minutes, turn of heat and let cool.

In a small mixing bowl combine and mix by hand cheddar, cilantro, onion (once cooled enough to handle), orange zest and orange juice. By hand gently fold in crab meat.

One one side of each tortilla spread 1/4 of the brie cheese with a cheese knife. Now evenly sprinkle 1/4 of mixture on the same half of each tortilla. Gently fold and press tortillas in half.

Over medium high heat, in a non stick medium skillet place two of the quesadillas and cook both sides flipping once about 3-4 minutes or until golden.

Slice into 3 to 4 slices and serve warm with our guacamole (check topping/sauce label.)

  2. You're right, everything is better with cheese. Crab meat doesn't hurt either. These looked tasty!
