Carne Asada Double Decker Tacos

I saw a commercial for Taco Bell Double Decker tacos and they reminded me of a meal I had at my calculus Professors house back in 1998. He had the class over before finals for some of his Double Decker tacos. We sat around eating tacos and playing Star Fox 64. It is my fondest memory of calculus! We never really eat fast food and I do not know how I would track down my old teacher, so I decided to create my own. I am glad I did because they were even better than I remember them being! I took them to Zo for lunch and as we both crunched it we both said WOW with a mouth full of food. The big difference here is using grilled Carna Asada instead of ground beef.

Ingredients:
2-3 lbs Carne Asada sliced steak
1 1/2 cup fresh orange juice
1/2 fresh lime juice
1/2 cup white grape fruit juice
1/4 tequila or mezcal
1/4-1/3 cup fresh cilantro
6-8 hard shell tacos
6-8 soft shell tacos
6-8 cherry tomatoes (chopped)
1/2 cup fresh Romaine lettuce (shredded)
1 cup Spicy refried beans (sides/salads label)
1 cup sharp cheddar (shredded)

In a large seal able container place steaks and pour juices over steaks (we freshly squeeze the juices over them individually.) Add Mezcal or tequila and then sprinkle fresh cilantro. Marinate 25 minutes to 24 hours.

Preheat grill to medium high.

Remove meat from container and cook on grill 4-5 minutes per side or until done. Heat hard shell tacos in oven at 350 degrees for about 5 minutes and heat soft shell tortillas in small skillet over high heat for 1 minute per side. Evenly spread refried beans on soft tortilla and shape around hard shell taco. Fill with meat, cheese, lettuce and tomato!
