This is what happens to leftover in our house, we toss them together and make something quick and tasty out of them. We had both shrimp, Kimchi just sitting in the fridge with some chopped up veggies and leftover ride. So we through them together and hoped for the best. This meal was a little sweeter than I expected it to be! It would be really great on a summer afternoon!

Ingredients:
1 lb gulf shrimp (peeled, tailed)
1/3 cup spicy kimchi
3 green onions (chopped)
1 jalapeno (seeded, diced)
2 tbsp fresh basil (chopped)
1/4 cup carrots (shredded)
1/2 of a sweet lemon
1/2 tsp 5 spice
2 tsp sriracha
1 tbsp unsalted sweet European butter
1 1/2 cups steamed white rice

In a medium bowl mix together rice and lemon juice and sit to side until ready to use.

In a large skillet melt butter over medium heat. Once melted add all ingredients except for rice and lemon juice and cook for 7-10 minutes or until shrimp are cooked through.

Spoon shrimp mixture over rice and serve hot.
