Cranberry-Habanero Glazed Ham

This is the ham I made for Easter. I made a similar ham for Easter 5 or so years ago. I find that people who normally do not like ham, like this ham. I am not sure what about its flavor makes it appealing for non ham lovers but why fight it? Enjoy!

Ingredients:
7.5-8.5 lb Applewood smoked ham
1 14 oz can jellied cranberry sauce (I used ocean spray brand)
1/4 cup 1 tbsp Apricot preserves
1/4 cup brown sugar
2-3 habaneros (seeded, diced)
2 tsp Dijon mustard
3/4 tsp ground cloves
1 tbsp sweet European butter

Preheat oven to 325 degrees. Place ham bone down on a baking safe pan covered in aluminum foil. Once oven is heated heat ham for 1 hour and 15 minutes.

While ham is cooking whisk together preserves, cranberry sauce, brown sugar, cloves and mustard in a medium mixing bowl until mixed well. Melt butter in a medium sauce pan over medium heat. Once melted add diced habaneros and cook for 3-4 minutes. Now whisk the mixture in with habaneros and butter constantly for 5 minutes. Turn heat to low and continue to whisk gently for 5 additional minutes. Turn off heat (but leave on burner,) cover, and let sit until ready to use.

After ham has heated for 1 hour and 15 minutes, remove from oven and baste with thick coat of glaze. Return to oven and let heat for another 45 minutes. Remove from oven and move ham to serving dish. Take drippings of ham and sauce and pour into a small bowl. Mix together, then use this mixture to baste the ham until it is glistening. Slice and serve hot!
