Scallop Sincronizada

I had some scallops that I said I was going to make 3 days ago. It was time to cook them before they went bad but I really didn't want to cook. So I just grabbed some items out of the fridge with the sole thought of making something easy but tasty. Sounds easy enough right? Well, the odd thing is usually when I try to make something easy it turns into a 3 hours cooking session or it just tastes like cardboard. But the cooking god's were smiling down at me and I made these Sincronizadas that tasted fancy but I didn't have to break a sweat to make. They would be great as an appetizer, lunch or dinner entree! My favorite kinds of meals are those that are quick, easy but taste amazing! Enjoy!

Ingredients
Sincronizada
1/2 lb scallops (sliced)
1/3 cup pepper jack (shredded)
1/4 cup white cheddar (shredded)
1/3 cup yellow bell pepper (chopped)
1/3 cup shallots (diced)
3 garlic cloves (minced)
1 tbsp sun-dried tomatoes in oil (diced)
1/2 of a lime's juice
1 tsp pesto
fresh crack pepper (to taste)
2 tsp olive oil
4 partially cooked tortillas

Lime Cilantro Sour Cream Dip
1/2 cup sour cream
1 tbsp 2 tsp fresh cilantro (chopped)
1/2 of a lime's juice
1/2 tsp Tapatio hot sauce
pinch cumin
pinch chili powder

Sour cream
Mix sour cream with lime juice and cilantro until even. Cover and chill sour cream until ready to use. Before serving sprinkle cumin and chili powder over the top for flavor and a colorful garnish.
Sincronizada
Mix cheeses together.

In a 10 inch skillet heat olive oil over medium heat. Once heated add all sincronizada ingredients except cheeses and tortillas. Cook for 5-7 minutes, stirring often or until scallops are turning golden. Remove mixture and split it in half. put half of the mixture onto one tortilla, sprinkle 1.2 of cheese over mixture and then top with a tortilla. Repeat with the rest of the ingredients.

Wipe out your skillet with a paper towel, add a sincronizada to the skillet and cook for 2-3 minutes or until tortilla is starting to brown, flip and repeat with the other side of the sincronizada. Remove sincronizada from skillet and repeat steps above with the second one (I actually use two skillets and cook both at the same time.) Move sincronizadas to plates, slice and serve with dip. Enjoy!
