Spanish Scampi

Here is a Spanish(-ish) take on Shrimp scampi. Or I guess you could say it is a Scampi take on drunken shrimp? Either way it is super shrimp citrus yummy! So if super shrimp citrus yummy sounds good, then you should make it! If it doesn't, what is wrong with you? I am only letting you off the hook if you are allergic to seafood. Otherwise something is wrong with you and we need to liven up your taste buds! First step, make this, second step make something else you have never tried and try it!

Ingredients:
Shrimp
1 lb jumbo Gulf shrimp (shelled)
3 green onions (chopped)
1 jalapeno (seeded, diced)
1 lime's freshly squeezed juice
1/4 teaspoon grated lime zestpinch garlic powder
kosher salt (to taste)
fresh crack pepper (to taste)
pinch oregano
pinch brown sugar
2-4 servings white rice
1 tbsp sweet European unsalted butter

Sauce
3 tbsp sweet European unsalted butter (softened)
2-3 tbsp gold tequila
1 tbsp Italian volcanic lemon juice
3 tbsp fresh cilantro (chopped)
2 tsp fresh Italian Parsley (chopped)
2-3 garlic cloves (minced)
1/2 tsp cholula hot sauce
1/2 tsp Worcestershire sauce
1/8 lemon pepper
kosher salt (to taste)
fresh crack pepper (to taste)

Sauce
In a small bowl mix together all sauce ingredients with a fork until even.

Shrimp
Cook rice according to instructions.

Mix together all shrimp ingredients in a medium bowl except butter.

Heat butter over medium heat in a large skillet. Once butter has melted add shrimp mixture to skillet and cook for 2 minutes. Now quickly flip all the shrimp and cook for 2 more minutes.

Remove shrimp from skillet, add the sauce mixture and let simmer for 2-3 minutes. Scrap skillet with a wooden spatula to make sure no bits are stuck to the bottom of the pan. Add shrimp back to skillet and turn heat to high. Cook shrimp for 1-2 minutes or until fully cooked.

Whether you are doing 2 or 4 servings divide rice and mixture evenly into bowls and serve hot. Enjoy!
