Pan-Asian Meatloaf

Now this is an interesting Meatloaf! I would have to say we had a funny couple weeks of food, going for straight Asian to American food with Asian added twists. My favorite meal was our Asian Potato salad with this meatloaf. Not only were they tasty but it was also funny to be eating potato salad and meatloaf that smelled and tasted like Asian food. I kept imagining my Chinese Aunt walking up and konking me on the head. I hope you enjoy this crazy mix of cuisine ideas!

Ingredients:
Meatloaf
1 1/4 lb ground pork
1 large egg
2 tbsp coconut milk
2 tbsp Pan-Asian BBQ Sauce
1/2 cup white onion
1/4 cup pineapple (chopped)
1 tbsp 1/4 tsp apricot ginger sauce 2
3 tbsp Panko crumbs
1/2 cup Japanese eggplant (chopped)
1/4 cup Shiitake or Enoki mushrooms (chopped)
1/4 of a baby bok choy (chopped)
2 tsp fresh mint (diced)
1 tbsp fresh Basil (diced)
1/2 Serrano pepper (diced)
1 tbsp cilantro (chopped)
1 1/4 tsp hot mustard
1/4-1/2 tsp clover honey
2 tsp soy sauce
fresh crack pepper (to taste)
kosher salt (to taste)

Topping
2 tbsp Pan-Asian BBQ Sauce
1 green onion (chopped)

Preheat oven to 400 degrees. In a large bowl mix together all meatloaf ingredients by hand until mixed well. Roll out and shape meatloaf on a piece of wax paper into a loaf shape. Place meatloaf into a greased bread pan. Drizzle Pan-Asian BBQ Sauce over Meatloaf and then sprinkle with green onions.

Place meatloaf in oven and bake for 45 min uncovered. Remove meatloaf from oven and carefully drain off excess liquid, return to oven and continue to bake for 30-35 minutes. Remove meatloaf and let cool for 5 minutes before slicing and serving hot! Enjoy!
