Salami and Swiss Sliders

These are one of my dream meals.  Meaning I dreamed making these while sleeping, woke up and decided I should make them.  This is only the third recipe I have dreamed.  One came out amazing, one was almost inedible and this one was great for snacking on!  That is not to say it is only for snacking on, I just know that everyone is not a fan of swiss and salami.  Personally Zo and I love swiss and salami, so we loved these little sliders!  I think what really made them taste amazing is the mayo sauce I used on them. It is the same sauce I used on the Santa Fe Cheesesteak sandwiches and is fast becoming my favorite sandwich spread.  So enjoy our Salami and Swiss Sliders and enjoy my special mayo sauce!

Ingredients:
Slider Patties
8oz lean ground Angus beef
8oz good quality dry Salami (shredded or diced)
1/2 cup baby swiss (shredded)
1/2 of a jalapeno (aeeded, diced)
1/3 cup white onion (chopped)
2 cloves garlic
1 egg
1/4 tsp essence
Fresh crack pepper (to taste)

Misc
8 1/8 inch slices of Salami
4 slices swiss cheese (sliced in half)
1/3 cup Bella mushrooms (sliced)
1 tbsp fresh chives (diced)
8 Thin dinner rolls (cut down the middle to make buns)
1/4 cup Jack Daniel's honey mustard
2 tsp unsalted Sweet European butter

Mayo Sauce
1/3 cup mayonnaise
2 garlic cloves (sauted and chopped)
2 tbsp red or white onion (sauted and chopped)
1/8 tsp cumin
¼ tsp lemon juice
1/8 tsp dry mustard
2 tsp olive oil

Mayo Sauce
In a small sauce pan heat oil over medium heat.  Once heated saute onions and garlic for 5-7 minutes.  Remove from heat and pour mixture into a small mixing bowl.  Stir together with the remaining ingredients and chill until ready to serve (it is also good at room temperature.)


Misc
In a small frying pan heat oil over medium heat.  Once heated saute mushrooms and chives together for 5-7 minutes (it is good to do this while you are grilling your patties.)


Sliders
Heat grill to medium low heat.

Mix together all ingredients in a medium mixing bowl until mixed through.  Form 8 even sized patties about 1/4-1/3 inch think.  Place patties on middle grill and cook for 5-6 minutes.  (Watch for flare ups because the salami will drip oil into the flames.)  Flip patties and cook for an additional 4-6 minutes or until cooked through.  For the last 2-3 minutes add your slices of salami and rolls, grilling and removing the same time you remove the patties.  Once you have remove the patties place sauteed chives and mushrooms over patties and cover with half a slice of swiss.

Spread your desired amount of mayo sauce and mustard onto each side of all the buns.  Place a patty on each but and top with a slice of grilled salami.  Serve while still warm and enjoy!
