Red Wined Breast of Chicken

It is funny how good thing always happen when you least expect them, good things like this meal! We had left over red wine sauce, Zo had just purchased some chicken and neither one of us new how we wanted to cook the chicken.  It was date night and Zo wanted me to cook her a fancy dinner and some how I combined what we had and as luck would have it I made this simple but tasty recipe! Or as Zo says it is not luck it is talent.  I do not know if it is a talent to be lucky in the kitchen but I will take what I am given!  I hope you enjoy this Red Wined Breast of Chicken because we really loved it.  If you do not like spice in your food you may want to cut back on the Cayenne a bit.  It has a little bite to it.

Ingredients
2 skinless boneless Chicken breasts (lightly tenderized with meat hammer)
1 slice bacon
2/3 cup Bella mushrooms (sliced)
2-3 garlic cloves (minced)
1/2 tsp smoked paprika
1/4 tsp caynne pepper
1 tbsp 2 tsp brown sugar
1 cup Caramelized Red wine sauce
kosher salt (to taste)
fresh crack pepper (to taste)
2 tsp olive oil

In a medium sauce pan heat oil over medium high heat. Once heated crisp bacon in oil.  Remove the crisped bacon and discard.  Cook garlic in the oil until tender (3-5minutes.) Reduce heat to medium and place both chicken breast in the bottom of the sauce pan.  Cover with a slight crack in the lid and cook chick for 6-8 minutes, flip and continue cooking for 6-8 minutes or until cooked through.

Remove chicken from sauce pan and drain oil. Mix seasonings together, add the chicken back to the sauce pan and sprinkle with seasoning mixture. Sprinkle mushrooms around chicken, pour in with red wine sauce. Cover with a slight crack in the lid and reduce heat to medium low. Let simmer for about 10 to 15 minutes.  Move chicken from sauce pan to serving dishes, top with red wine sauce and serve immediately.  Enjoy!
