Voila Breakfast Sandwich

I found it!  The Voila Breakfast Sandwich is a great way to wake up your taste buds and send them on a trip around the world! Enjoy!

Ingredients:
3 eggs
1 tbsp yummy sauce
two pinches white pepper
two pinches fresh thyme (diced)
two pinches fresh oregano (diced)
2 tsp Gouda (shredded)
2 tsp Big red cheddar (shredded)
2 1/8 inch slices pancetta
2 buttery buttermilk biscuits (cut in half to make buns)

In a small mixing bowl whisk together eggs, yummy sauce, white pepper, thyme and oregano until even.

Add pancetta slices to a 10 inch non-stick skillet and fry over medium heat crisping on both sides.  remove pancetta from skillet and remove all by 2 tsp of oil by wiping the inside of the skillet with a paper towel.

Pour egg mixture into skillet covering evenly. As the mixture begins to set at the edges (4-5 minutes) add your cheese by sprinkling it it along one side of the omelet. Let cook 4-5 additional minutes. Fold omelet half without cheese over half with cheese using a spatula and let sit 2-3 minutes before sliding onto plate.  Cut omlete in half with the spatula and place 1/2 on to each biscuit, top with a slice of crisped pancetta and serve hot.
