Coconut Macaroons

Coconut Macaroons are one of my favorite cookies to munch on!  This is an old recipe of Zo's that she commonly uses off of an 8 by 5 note card.  This cookies are very dangerous in our house, dangerous to my waist line that is!  I will eat them by the handfuls and so will anyone else that can pull them out of my hands.  Enjoy!

Ingredients:

4 egg whites
1 cup sugar
1/4 tsp salt
1/2 tsp vanalla
1/2 tsp almond extract
1/2 cup flour
2 1/2 cup coconut

In a small mixing bowl whisk together egg whites, sugar and salt over simmering water.  When mixture is warm to the touch remove from heat and whisk in vanilla extract, almond extract, flour and coconut. Cover and refrigerate for 1 hour.

Preheat oven to 350 degrees.

Place 2 tbsp dollops on a buttered or parchment papered baking sheet and bake for 325 degrees for 15 -20 min.  Remove from oven and cool for 15-20 minutes.  Before eating fill free to chocolate dip your macaroons for a special and tasty touch, Enjoy!
