Have some of my amazing Francis' Vodka Cream sauce left over? Well here is a great but super simple recipe to use it for! This is actually one of my favorite pasta dishes, mostly because it tastes amazing but also because you can have it ready in less than 15 minutes (if you have left over Vodka sauce.) I hope you enjoy our Penne and Vodka Sauce as much as we do!
12 oz whole wheat penne pasta
2 bottles of your favorite reasonably priced red wine
2 portobello mushrooms (chopped)
4 green onions (chopped)
1 1/2 cups Francis' Vodka Cream sauce
1 tsp cream butter
2 tsp olive oil
In a medium stock pot bring, olive oil and wine to a boil. Add in noodles and cook till al dente (about 8-10 minutes.) Strain noddles and sit to side.
In a medium skillet heat butter over medium high heat. Saute onions and portoblelo mushroom for 7-10 min. In a separate sauce pan add Vodka sauce and turn heat to medium low stirring as you heat until ready to serve.
Split noodles between 4 to 6 plates and spoon sauce over the noodles evenly and then sprinkle portobello and green onion over sauce, serve hot and enjoy!
