Too Lazy Red Beans and Rice

This is a semi traditional take on the classic Red Beans and Rice I grew up eating.  I make it one of two ways, either with garlic sausage, chicken and bacon or andouille sausage, ham hocks and chicken.  It depends on if I am looking for a lighter or heavier flavor to pair with the sides we are having along with it.  I found my self stumped as to how to categorize Red Beans and Rice.  I mean what is it?  The closest thing I can relate it to is a thick stew.  Most times I will make it as a main course but it is also really good as a side to a sandwich or paired with a salad for lunch.  Enjoy!

Ingredients:
Red Beans and Rice

1 lb smoked andouille sausage or garlic sausage (chopped)
1/2 cup chicken breast (chopped)
2 slices bacon (diced, or 1/4 cup diced ham hocks)
1 red onion onion (chopped)
1 green bell pepper (chopped)
1 stalk celery (diced)
3 garlic cloves (chopped)
1 (15 oz) can red kidney beans (drained)
1 (15 oz) can super red kidney beans (drained)
1 (16 oz) can fire roasted tomatoes (diced)
1 1/2 tsp fresh oregano (diced)
1 1/2 tsp fresh thyme (diced)
2 1/2 tsp Italian parsley (chopped)
2 1/2 tsp Louisiana hot sauce
2 bay leaf
1/2 tsp smoked paprika
1 (14.5 oz) can beef broth
1/2 beef broth can of warm water
1 cup uncooked rice
2 tbsp butter
kosher salt (to taste)
fresh crack pepper (to taste)


Garish
1 green onion (diced)
fresh herbs (diced)


In a large sauce pan heat butter over medium heat, once melted saute onion, garlic, bell pepper and celery for 7 minutes. Remove mixture to plate, reduce heat to medium low and cook chicken, bacon and sausage for 5 minutes. Add vegetable mixture back to sauce pan, then pour in beans and lightly smash 1/4 of them.  Fold in tomatoes, herbs, salt, pepper and hot sauce.  Pour in your can of beef broth, then add 1/2 can of warm water, stir in rice, turn heat to medium high and bring to boil.  Reduce heat and simmer uncovered for 30-35 minutes stirring occasionally until rice is ready and mixture has reached your desired thickness. Serve hot with green onion and herd garnish. Enjoy!
