Whipped Cocoa Orange Ricotta

We had three containers of ricotta go bad before I finally got around to making this.  And then it was Zo making it as I grilled dinner outside.  Why did I not want to make this delicious Whipped Ricotta?  I did not believe it would be good at all.  I read a few years back that people would make different deserts out of whipped ricotta and it just seemed disgusting to me.  I am just not the biggest fan of ricotta.  Or at least I was not in the past.  The last year or so I have really started to enjoy ricotta and cottage cheeses.  I will eat them plain by the spoonful now.  Still I did not want to make this dessert idea.  Finally I finalized the idea and asked Zo if she would mind whipping it together as I cooked up the rest of dinner.  She gave me a taste and I actually got excited about doing the final touches myself due to its rich creamy flavor!  I hope you enjoy this dessert as much as we did, I should have made this years ago!

Ingredients: 
Whipped Ricotta
1 16 oz container of whole milk ricotta cheese
4 oz nuefchatel cheese (softened)
1/4 cup heavy cream
1 tsp pure vanilla extract 
3 tbsp cocoa powder

2 tbsp powdered sugar
1/4 cup 1 tbsp clover honey 
1/2 tsp ground cinnamon 
1 orange (peeled, diced)



Garnish
6-10 mint leaves
4-8 orange slices (cut in half or whole)
2 tbsp toasted coconut or shaved dark chocolate

In a large mixing bowl, use a stand or hand electric mixer to whip together ricotta, cream, neufchatel, vanilla, powdered sugar, cocoa powder, honey and cinnamon until smooth and fluffy. Fold in diced orange (as well as orange juice from dicing the orange.) Cover and chill for 30 minutes or until ready to serve.



Spoon into serving dishes and garnish with orange slices, mint and toasted coconut or shaved dark chocolate.
