Frenchy Topped Sirloin

Here is a simple way to cook a top sirloin steak.  I called it Frenchy because I had no idea what else to call it!  I hope you enjoy!

Ingredients:
Steak
.75-1 lb top sirloin steak
1 tbsp olive oil
fresh crack pepper (to taste)
2-3 tsp bacon grease
1/2 cup French table wine

Rub
1/2 jalapeno (seeded and diced)
3 cloves garlic (diced)
1/4 tsp kosher salt

Veggie mix
1/2 small onion (diced)
1/2 celery stalk (diced)
1 large red potato (halved then sliced)
1 large white potato (halved then sliced)
1 large purple tomato (halved then sliced)
kosher salt (to taste)
fresh crack pepper (to taste)

Rub
In a small dish mush kosher salt into garlic and jalapeno until paste is formed. for paste to rub in scored meat

Vegetable Mixture
Toss all ingredients together in a medium bowl.

Steak
Score meat, the massage rub, olive oil and fresh crack pepper into meat.

In a medium skillet heat bacon grease over medium heat.  Once heated cook steak for 2-3 minutes, flip steak and continue to cook for 2-3 more minutes, (you are just browning the meat.)

Preheat oven to 350 degrees.

Move steak to small baking dish and surround with the vegetable mixture.  Crack a little fresh pepper and salt over the dish and then pour wine and juice from skillet into the dish.

Cover dish and bake for 35-40 minutes.  Serve hot and enjoy!
