More Traditional Red Beans and Rice

Here is a very traditional version of Red Beans and rice, even more so than my Too lazy Red beans and Rice recipe.  Zo asked for red beans and rice and I decided to make them just like my Mom and Dad use to.  I hope you enjoy!

Ingredients:
1 cup uncooked rice
1 package andouille sausage (16 ounce) (sliced diagonally and then halved)
1 red onion (chopped)
1 celery stalk (diced)
1 green bell pepper (chopped)
3 cloves garlic (minced)
2 (15 ounce) cans canned kidney beans (drained)
1 (16 ounce) can chopped fire roasted tomatoes
1/2 tsp fresh oregano
1/2 tsp fresh thyme
2 tbsp fresh parsley
kosher salt (to taste)
1/2 tsp fresh crack pepper
1-3 tsp Tabasco hot sauce
2 green onions (chopped for garnish)

Cook rice according to instructions on package.

Heat a large skillet over low heat.  Once heated cook sausage for 5 minutes (this is where we will get our oil to cook the rest of the food from.) Fold in red onion, bell pepper, celery and garlic, sauteing for 7-10 minutes or until tender.

Add beans, fire roasted tomatoes and Tabasco to skillet, stirring until mixed well. Fold in fresh herbs salt and pepper and let simmer uncovered for 20 minutes.

Serve hot over rice, garnish with green onion and enjoy!
