Here is a simple to make grilled cheese inspired sandwich. I came up with it simple by eating a slice of Chorizo cantimpalo, rolled with some fresh basil and a half slice of blue granite jack.  I thought it was a really interesting flavor mixture and decided to make it into a hot sandwich.  I hope you enjoy!

Ingredients:
2 potato buns
4 sandwich sized slices chorizo cantimpalo
2 slices blue granite jack
10 fresh basil leaves
1/4 cup red onion (1/2 on the inside half to make onion bun)
2 tbsp butter
1 tsp white balsamic vinegar

In an 8 inch skillet heat 2 tsp of butter over medium low heat. Once melted add chorizo cantimpalo slices and red onions.  Cook for 5-7 minutes and remove chorizo and 1/2 of the onions from the skillet.

Add remaining butter and balsamic to the skillet and let butter melt.  While butter is melting, make sandwiches by added a cheese slice, 2 slices of chorizo cantimpalo, spread out 1/2 of basil leaves and 1/2 of the onions you removed from the skillet to each of the potato buns.  Press sandwiches down firmly to flatten.

Stir contents of  skillet, split the remaining onions and arrange them each into a tangerine sized circle.  Place both sandwiches top bun down, one onto each circle of onions and then press down firmly.  Let cook for 2-3 minutes or until toasted and then flip over sandwiches.  Continue to cook 2-3 minutes on the bottom buns or until they are toasted and remove from skillet.

Serve you nice and toasty sandwiches warm and enjoy!
