Apricot Stuffed Grilled chicken

This Apricot Stuffed Grilled Chicken was an experiment gone totally right.  I wanted to make something on the grill stuffed with fruit because my sister always uses fruit to such great results.  So I kind of just took what we had and ran with it.  Luckily I never stumbled along the way and it came out tasty as can be.  Enjoy!

Ingredients:
3 chicken thighs with skin on
1 small apricot (diced)
1tbsp 1 tsp blue cheese (crumbled)
1/2 tsp hot Hungarian paprika
1/2 tsp ancho chili powder
1 tbsp fresh rosemary
3 tsp white truffle oil
kosher salt (to taste)
fresh crack pepper (to taste)

In a small mixing bowl toss together apricot, blue cheese, paprika, chili powder and rosemary.

Preheat grill to 450 degrees.

Slice into the middle of each of the chicken thighs from the top through the skin and make a small cavity. Evenly stuff each of the cavities with apricot mixture. Gently rub stuffed chicken thighs with truffle oil, salt and pepper.

Place chicken on top rack of grill and cook for 20-25 minutes at 450 degrees.  Remove chicken from grill and cover letting rest for 5-6 minutes before enjoying hot!
