Sun-Dried Tomato Pesto

After we started making pesto french bread pizza around the house we always added sun dried tomatoes. We did it so often we started just adding sun dried tomatoes to the pesto sometimes. It must be popular because I have even seen sun dried tomato pesto on store shelves now and then. I thought you guys might want to know how to make it from scratch and this is also the pesto I use on my pesto pizza bread.

Ingredients:
1/2 cup fresh basil (chopped)
2 tbsp parsley (chopped)
3-4 cloves garlic
1/4 cup pine nuts
3 tbsp Parmesan Regginao
3 tbsp Romano
1 1/4 cup olive oil 1
1 tsp white truffle oil (can be omitted)
1/2 tsp Kosher salt
1/2 tsp Fresh crack pepper
1/4 cup sun-dried tomatoes in olive oil (diced)

Put all Ingredients into food processor except olive oil and sun dried tomatoes and process till desired texture. Slowly drizzle in oil as you pulse the processor till mixed well. Stir in sun dried tomatoes. Use on bread or your favorite pasta.

  4. Thanks! I usually by my truffle oils at costco because that is where I have found them priced the lowest. I have also bought them at world market, raleys, belair, nobhill and most speciatly stores have it but they charge and arm and a leg!
